Which of the 500 GB laptop hard drives work best for the Sager 5793? Which ones fit and which ones seem to work the best.

Any laptop hard drive will work with it. I'm personally a fan of Western Digital, but Seagate makes some good stuff too. Either of those will get you good performance.

My main concern was I had seen that the new Hitachi 500GB laptop drive was too thick as it was 12.5mm height. Did not know if that was accurate or not.

Just checked yes the Hitachi is 12.5mm. The WD and Seagate are both 9.5mm.
The Hitachi 3 platters (I know it doesn't fit), WD 2 platters, gives great areal density. That will improve performance significantly on sustained read/writes. Seagate could not find # of platters but it must be 2 as 9.5mm I think that is why Hitachi is 12.5mm, 3 platters.

Does the 5793 have the option for adding a second internal hard drive in the optical bay like the earlier 57xx series did?

Woody from what I could find no? I wonder if because it comes standard with bluray has anything to do with why not an option?

No, regretably, the 579x only has room for 1 drive.
There have been users that replaced the optical bay with another hdd, but it is not recommended...
